Berry Good Breakfast Ideas for Summer

Berries and breakfast go hand in hand! I love when berry season is here because nothing beats fresh berries to sweeten up your breakfast. I've been thinking for awhile now that I want to get us out of this cereal rut we've trapped ourselves in over time. As I was busy pinning all these berry best breakfasts I've discovered some of the most fun and creative breakfast idea. I'm betting these will not only get us out of our rut, but we'll be eating healthier too!



But first I wanted to share some fun berry facts with you. Hot tip: share fun facts about food with your kids to get them interested in eating healthy!

Did you know....

Berries have a ton of anti-oxidants - which keep you young!

Bananas are considered a berry!

Red, White and Blueberry Simple Yoghurt Parfait





Today it was all about the yoghurt parfait. And simplicity. We've been trying to find simple, yet healthy snacks to mix things up a bit. Since Amberly loves helping in the kitchen I recruited her for this healthy snack mission and she happily obliged! With berries in season, this was a good time to recreate a personal favorite....



First, we headed to our local grocery store to purchase items for our Red, White and Blueberry Simple Yoghurt Parfaits. Red, white and blue make it perfect to enjoy for 4th of July celebrations you have coming up. Simple means you don't have a lot to fuss over and you can put the kids in charge of making it themselves.

1. Fresh Strawberries (Red)
2. Granola (for crunch factor!)
3. Mountain High Vanilla Yoghurt (White)
4. Fresh Blueberries (Blue)



Once we got home we were sure to rinse our berries.



Next, I had Amberly mash the strawberries to release more of their juice since that juice lends it's sweet flavor to each spoonful.




We found our strawberries were a bit tart. So we added 2 tsp. of sugar to the 1 pound of sliced strawberries before mashing them.


Now we have our layers lined up. It made sense to use ice cream scoops for simplicity


Now for assembly of the Red, White and Blueberry Simple Yoghurt Parfait!

Strawberries and granola. Check.



Mountain High Vanilla Yoghurt. Simple.


Then, blueberries. And repeat!



Now that is a beautiful and simple parfait!


She had so much fun creating this!

She can't wait to make these again! And neither can her brothers, whom she shared this with since we went a little overboard on layering. Good thing it is a healthy snack!


I love the idea of getting kids in the kitchen. The trick is to start off simply. We hope you try it with your kids this summer!

Fortified Pumpkin Oatmeal

We've got pumpkin fever in this house! Yesterday we went to Bates Nut Farm for some good ole fashioned fun. I think we bought more at the store than we should have but there are a few items I was thrilled to find and can't wait to use like Pumpkin Scones, Pumpkin Pie Almonds and Maple Pumpkin Butter.

Since we didn't have any English muffins on hand we couldn't crack into the Maple Pumpkin Butter but thought it would make a perfect topping for our Fortified Pumpkin Oatmeal.... and I was right!



This is just one more thing to use your leftover canned pumpkin puree with if you buy the big cans like I do and never need all of it. You only want to store that in an airtight container in the fridge for about 2 weeks. I try to use mine up sooner than that. Maybe one day I'll get it together enough to buy smaller size freezer ziploc bags and store what I don't use in the freezer.... but for now I don't have to worry about it because we have been on a Pumpkin Craze!

Here's what you'll need:

2 cups organic milk
1/2 cup pumpkin puree
1/3 cup brown sugar
2 tsp vanilla
1 tsp cinnamon
2 cups oats
3 tbsp raw shelled hemp seeds



Kitchen tools:

Medium pot
Liquid measuring cup
Dry measuring cups
measuring spoons
Stirring spoon

Combine first 5 items in a medium size pot over medium-high heat, stir ingredients and watch for the mil mixture to boil, it will happen pretty quickly. When it begins to boil, add oats and hemp seeds. Reduce heat to low, give a good stir and cover for 3-5 minutes stirring occasionally.

After spooning the oatmeal into the bowl I warmed just a couple teaspoons of the Pumpkin Maple Butter in the microwave to drizzle over the oatmeal and I was delighted with the addition.


We like to keep it healthy in this house, but I've got a sweet tooth so we try to find a balance. That's why I use organic milk and add the hemp seeds for protein. This is a breakfast treat I look forward to making again and again. Adding the Maple Pumpkin Butter sweet topping to perfect this autumn breakfast was just right.
